HISTORY

The “Maischeteigen” method (i.e. mash kneading) —a special mashing technique used by the old Bamberg brewers—gives Bamberg Brown Beer its full-bodied flavor. In this process, the mash is carefully rinsed in the lauter tun, kneaded with forks and then allowed to rest for some time. The mash swells in the water and turns into a kind of mash dough. The long steeping time allows a particularly large number of the mash’s components to be extracted, resulting in full-bodied, spicy aromas in the beer. When you drink it, Bamberg Brown Beer is almost reminiscent of a biscuit.

OUT OF TRADITION

Our Promise

wheat

Our beers are just like Konrad Graser: full of character.

Graser beers are unlike any others. Each one has a unique craft feature that sets it apart from normal beers. This distinctive technique in the brewing process gives Graser beers their unmistakable flavor. That’s why each one tastes like no other. It’s all part of our tradition.

Original recipes based on Bamberg’s oldest brewing tradition

Before Konrad Graser took over Hellerbräu, he ran the former Michaelsberg Brewery for many years as owner and brewmaster. The brewing logs containing his recipes date back to that time. The Michaelsberg Brewery, with documented brewing rights dating back to 1122, is considered Bamberg’s oldest brewing tradition.

family-tree

Graser beers are a family affair today, just as they were back then.

What would Konrad Graser say about the fact that his descendant, Matthias Trum, is breathing new life into his beers? He would surely be proud. Today, Matthias Trum—the sixth generation of his family—runs Hellerbräu, which his great-great-great-grandfather took over after his time at Michaelsberg.

With every Graser beer, we breathe new life into an old brewing tradition. The mashing process for Bamberg Braunbier, the hop roasting for Fränkisches Pils, and all the other unique features come from Konrad Graser’s brewing logs.
