Hellerbräu Bamberg: We brew with a passion for craftsmanship and tradition.
The history of Hellerbräu Bamberg goes back a long way. The history of our beers goes back even further.
Every Graser beer embodies a time-honored brewing tradition. Before Konrad Graser took over Hellerbräu Bamberg, he ran the Michaelsberg brewery as owner and brewmaster for many years. The former brewery, with brewing rights dating back to 1122, is considered Bamberg’s oldest brewing tradition.
The recipes used to brew Graser beers today trace their origins back to these brewing traditions and are based on Konrad Graser’s original brewing records. Each beer is characterized by a historical feature that makes it unique.
Konrad Graser ran the Michaelsberg Brewery as owner and brewmaster for many years before taking over Hellerbräu.
As brewmaster at the former Michaelsberg Brewery, Konrad Graser kept detailed brewing logs for his beers. He later brought these records with him to Hellerbräu. This was a stroke of luck for his descendant Matthias Trum, who now runs Hellerbräu Bamberg as the sixth generation of the family. The handwritten manuscripts passed down from his great-great-great-grandfather form the basis for the recipes of the Graser beers.

At Hellerbräu Bamberg, the art of brewing is a way of life. This is how we create beers with flavor and history.
Our brewers are masters of their craft. It’s no coincidence that Hellerbräu is regarded as a specialist in historic beer styles. Today, just as in the past, our beers are brewed in copper kettles and mature in the rock cellar beneath the brewery. We brew the Graser beers according to Bamberg’s oldest brewing traditions and breathe new life into long-forgotten craft techniques. In addition to the Graser beers, we at Hellerbräu also produce the well-known Aecht Schlenkerla Rauchbier using traditional brewing methods.
The history of Hellerbräu is closely tied to my family. With the Graser beers, we’re not just reviving a piece of brewing tradition—we’re breathing new life into the legacy of my great-great-great-grandfather.

The Graser Pub: the official taproom for Graser beers.
Graser beers are served fresh on tap here in the former Brudermühle mill. Konrad Graser used to have the malt for his beers milled at the Brudermühle mill complex.
